110gr Low Protein Wheat Flour

80gr Tapioca Flour

Cara Membuat

Gyoza skin

  1. Combine all dry ingredients, mix well.
  2. add hot water little by little until the dough is smooth then let stand for 20 minutes.
  3. Flatten the dough using a rolling pin until it is about 1 to 2 mm thick.

Gyoza stuffing

  1. Finely chop the fillets and shrimp.
  2. sliced ​​spring onions and mushrooms.

How to make

Tips for Applying Emina Cheese Mozza

Pengolahan Mozza :semakin tipis/halus mozza akan semakin cepat/mudah meleleh (Diparut tipis,Dicincang halus)

Penyimpanan: sebelum dipakai, lebih baik mozza disimpan di freezer setelah dicincang/diparut
supaya mendapatkan kadar air (minimal stgh jam - 1 jam) dan pastikan mozza tertutup/terbungkus rapat saat penyimpanan

Pengolahan:

  1. Filling: mozza dipotong2 menjadi bagian lebih kecil dulu (poin 1), lebih baik ada penambahan bahan seperti mayonise, saos untuk menambah kadar air pada mozza yang membantu proses meleleh lebih baik.
  2. Topping: block pizza. Mozza diparut tipis, beri tambahan bahan saos/mayo, oven/panggan di suhu 200-210oC selama 5-7 menit. Untuk Emina Cheese Slice Mozza topping burger - slice ditaruh diatas daging yg hampir matang lalu ditutup 2-3menit.
  3. Ditorch: Parutan lebih kecil. Jarak api sekitar minimal 10 cm dari keju. 1,5-2 menit.
