Bienenstich Emina Cheese

Sweet Bun Dough

500gr High Protein Flour

60gr Sugar

5gr Salt

10gr Instant Yeast

2gr Egg 

200gr UHT Milk

125gr Unsalted Butter

 

Cheese Custard

50gr  Emina Cheese Mild

200gr Fresh Milk 

1gr Egg Yolk

50gr Sugar

15gr Maizena

 

Toppings

60gr Milk

100gr Butter

125 Sugar

80gr Almonds

80gr  Emina Cheese Mild

50gr Honey 


Cara Membuat

dough bread

  1. Mix all ingredients except butter and salt
  2. Stir the ingredients until half smooth, then add the salt and butter
  3. Mix all the ingredients until smooth
  4. After kneading, let the dough rest for 30 minutes, cover tightly with plastic
  5. Discard the gas in the dough then divide into 3 parts and put in a 20cm diameter baking sheet
  6. Let the dough rest for 30 minutes and then press the dough until it is completely flat into the pan
  7. Let stand again for 45 minutes
  8. Prepare the topping, cook the milk, butter, sugar, honey, and cook until the sugar is dissolved, remove from heat and then input almonds and cheese  Emina Mild Cheese  already on the dice
  9. Pour the toppings over the proped bread dough and put in the oven at 170 C for 20 minutes
  10. Remove and cool then cut into 2 parts
  11. Prepare the filling, mix egg yolk, sugar and cornstarch and beat until combined
