EMINA KOREAN GARLIC

Ingredients

Sweet Bun Dough:

400gr High Protein Flour

50gr Sugar

3gr Improver

4gr Salt

7gr Instant Yeast

1 Egg

15gr Powdered Milk

160gr UHT Milk

35gr Unsalted Butter

70gr Ice

 

Cheese Filling

330gr Emina Cheese Mild

330gr Fresh Milk

50gr Sugar

 

Topping

300gr Butter

30gr Garlic

2 Egg

20gr Honey

50gr Condensed Milk

15gr Parsley

180gr Emina Cheese Mild


Preparations
  1. Mixture 1 : mix powdered milk, improver, sugar, egg and flour into a bowl. Whisk with a low speed
  2. Mixture 2 : in a separate bowl, add UHT milk and ice
  3. Combine mixture 1 & 2, whisk with a low speed until combined
  4. Increase the speed, mix until the dough roughly formed, add butter and salt, mix until the dough fully formed
  5. Rest the dough for 45 minutes. take 40 gr of dough and turn it into ball shape, rest again for another 30 mniutes. shape it into a ball and put into the baking sheet
  6. Let the dough proving for 60 - 90 minutes
  7. Bake in the oven for 15 minutes at 165 degrees C

 Cheese Filling:

  1. Mixture 1 : melt emina cheese mild, add milk and sugar, let it cool

Topping

  1. Melt butter, add egg, garlic, parsley, honey, and condensed milk, stir well

Finishing

  1. Half cut the bread into 6, put cheese filling in the middle
  2. Dip the bread in the topping batter and put grated cheese on top. Bake again for 10 minutes at 160 degrees X
  3. Enjoy!
