Emina Cheese Strawberry Crumble


Sweet Bun Dough

400gr High Protein Flour

50gr Sugar

3gr Improver

4gr Salt

7gr Instant Yeast

1gr Egg

15gr Milk Powder 

160gr UHT Milk

35gr Unsalted Butter

70gr Ice Cubes



180gr Emina Cheese Block Mild

180gr Strawberry Jam





Sweet Bun Dough

  1. Ingredients 1: Mix powdered milk, improver, sugar, eggs & flour into a bowl mixer, mix on low speed
  2. Ingredients 2: in a separate container, add UHT Milk and Ice Cubes
  3. Mix Ingredients 1 & 2 then stir on low speed until it's well blended
  4. Increase the speed, stir until it's almost smooth, then add the butter and salt, stir until smooth
  5. Let the dough rest for 45 minutes then weigh 40gr into a ball and then rest for another 30 minutes
  6. Roll out the dough, sprinkle with Emina Cheese Block Mild and strawberry jam in the shape of a bun
  7. Proving the dough for 60 to 90 minutes until it expands to the maximum
  8. Polish with egg then sprinkle with crumble 
  9. Bake at 170 degrees for 12 minutes
