Emina Cheese Brownie Bun


Sweet Bun Dough Ingredients

400gr High Protein Flour

50gr Sugar

3gr Improver

4gr Salt

7gr Instant Yeast

1gr Egg

15gr Milk Powder

160gr UHT Milk

35gr Unsalted Butter

70gr Ice Cube


Cheese Filling Ingredients

250gr Emina Cheese Mild

330gr Fresh Milk

50gr Sugar


Topping Ingredients

30gr Butter

80gr Icing Sugar

0.5gr Egg

80gr Medium Protein Flour

25gr Cocoa Powder

15gr Chocolate Bar

50gr UHT Milk

10gr Cashews

20gr Emina Cheese Mild


Sweet Bun Dough:

  1. Ingredient 1: Mix Powdered Milk, Improver, Sugar, Egg & Flour into a bowl mixer and stir on low speed
  2. Ingredient 2: Add UHT Milk and ice in a separate container then mix the ingredients 1 & 2 and stir at low speed until it well blended
  3. Increase the stirring speed until it the mix is almost smooth, then add butter and salt, then stir until it smooth
  4. Let the dough rest for 45 minutes then weigh the dough to 40gr, round it off, then rest again for 30 minutes then round it back together in the pan
  5. Proving the dough for 60 to 90 minutes untuk it expands to maximum
  6. Top with Brownie
  7. Bake at 170 degrees celsius for 12 minutes

Cheese Filling

  1. Ingredient 1: Melt Emina Cheese Mild with milk then add sugar and chill it



  1. Melt the chocolate bars
  2. Mix icing sugar and butter until it slightly fluffy, then add mixed egg until it well fluffy
  3. Pour the melted chocolate into the mixture, stir gently and add the dry ingredients, flour, cocoa powder, mashed cashews and shredded Emina Cheese Mild, mix it well
  4. Add the Milk and stir until well blended



  1. After the bread is ready baked, put topping ingredients which has been prepared
  2. Put at the oven with 170 degree celsius for 12 minutes
  3. Chill and inject the bread with the cheese filling
