Emina Cheese Brioche Choco Slice


250gr High Protein Flour

20gr Sugar

2gr Salt

5gr Instant Yeast

1gr Eggs

10gr Milk Powder

125gr UHT Milk

70gr Unsalted Butter

50gr Emina Cheese Mild

20gr Almond Slice

20gr Raisins

12gr Emina Slice Cheese Choco

  1. Ingredient 1: Mix Powdered Milk, Improver, sugar, eggs & Flour into Mixer Bowl, and stir at low speed
  2. Ingredient 2: add UHT Milk separately
  3. Mix Ingredients 1 & 2, Stir at low speed until it well blended
  4. Increased the speed mixed, stir it until it almost smooth, then add butter and salt, stir untuk it smooth
  5. Rest the dough for 45 minutes then weigh it in to 250gr dough, round it off the rest it again for 30 minutes then flatten it
  6. Fold Emina Slice Cheese Choco in and place it on the pan
  7. Proving the dough for 60 to 90 minutes until it expands to the maximum
  8. Bake at 165 degrees for 25 minutes
