Bienenstich Emina Cheese


Sweet Bun Dough

500gr High Protein Flour

60gr Sugar

5gr Salt 

10gr Instant Yeast

2gr Egg

200gr UHT Milk

125gr Unsalted Butter


Cheese Custard

50gr  Emina Cheese Mild

200gr Fresh Milk

1gr Egg Yolk 

50gr Sugar

15gr Maizena



60gr Milk 

100gr Butter

125gr Sugar

80gr Almond

80gr  Emina Cheese Mild

50gr Honey 


Bread Dough 

  1. Mix all ingredients except butter and salt
  2. Stir the ingredients until it's half smooth then add the salt and butter
  3. Mix again all ingredients until it's smooth
  4. After kneading, let the dough rest for 30 minutes wrap tightly with cooking plastic
  5. Remove the air inside the dough and then divide the dough into 3 parts and put it into a baking sheet with a diameter of 20 cm
  6. Rest the dough for 30 minutes then press the dough firmly until the dough is completely flat into the pan
  7. Rest it again for 45 minutes
  8. Prepare the toppings, cook, by mixing the milk, butter, sugar, and honey. Cook, until the sugar, is dissolved. Add the Almond and Cheese Dice of Emina Cheese Mild
  9. Pour the topping on top of the bread dough and put it in the oven at 170 C for 20 minutes
  10. Cool the bread dough down, and cut into 2 parts
  11. Prepare the filling by mixing egg yolk, sugar, and cornstarch
  12. Cook by mixing the Milk and Emina Cheese Mild until it's dissolved 
  13. Add Ingredients 11 & 12, cook, until it boils then cool it down
  14. Fill the fillings into Beinenstich bread and sprinkled the shredded Emina Cheese Mild
  15. Beinenstich Bread is ready to be served
